This is a quick and easy dessert to serve to guests on national holidays. It is specially good in the summer with fresh, local fruit.
- 4 ounces Cream Cheese softened
- 3/4 Cup Heavy Cream
- 1/4 Cup Confectioners Sugar
- 1 Teaspoon Vanilla Extract
- 2 Cups Strawberries, diced
- 1 1/2 cups Blueberries
- 1/2 Cup Whipped Cream
Whip cream cheese in a medium bowl until very soft - about 2 minutes. Add heavy cream and whip until soft peaks form. Add confectioners sugar and vanilla and mix.
In glass bowl or juice glass layer the berries and the cream. Top with a dollop of whipped cream.
Refrigerate for an hour before serving to allow the parfait to set up.
