Red, White & Blue Parfait

This is a quick and easy dessert to serve to guests on national holidays.  It is specially good in the summer with fresh, local fruit.

Ingredients:

  • 4 ounces Cream Cheese softened
  • 3/4 Cup Heavy Cream
  • 1/4 Cup Confectioners Sugar
  • 1 Teaspoon Vanilla Extract
  • 2 Cups Strawberries, diced
  • 1 1/2 cups Blueberries
  • 1/2 Cup Whipped Cream

Instructions:

  1. Whip cream cheese in a medium bowl until very soft - about 2 minutes. Add heavy cream and whip until soft peaks form. Add confectioners sugar and vanilla and mix.

  2. In glass bowl or juice glass layer the berries and the cream. Top with a dollop of whipped cream.

  3. Refrigerate for an hour before serving to allow the parfait to set up.
