We are always on the hunt for a new and different breakfast entree for our guests. This baked egg dish is a brand new guest favorite! You can try different kinds of pesto that you may have on hand, but we prefer basil pesto.

Baking time can be adapted depending on whether you like eggs cooked through or softer.

Cook Time: 20 Minutes
Total Time: 35 Minutes
Servings: 1

Ingredients:

  • 1 slice smoked turkey
  • 1 Tbsp smoked gouda, cut in small pieces
  • 2 medium eggs
  • 1 tsp. pesto (we prefer a good basil pesto)
  • 1 cherry tomato, cut in half

Instructions:

  1. Preheat oven to 375 degrees. Coat a jumbo muffin tin with cooking spray.

  2. Line muffin tin with 1 slice of smoked turkey.

  3. Cut smoked gouda in small pieces and fill the cup approximately 1/3 full.

  4. Slip the eggs into the muffin cup. Top with two tomato halves to the right and to the left of the egg yolks (one-half upside down for a prettier presentation). Now put the pesto across the eggs between the tomato halves.

  5. Bake for about 10 minutes, then pop any air bubbles in the egg whites (fresh eggs will have these) with a toothpick. Depending on your oven you might need to turn the muffin pan now. Then bake for another 8-10 minutes until egg yolk and whites are set.

  6. Place a lettuce leaf (we like frissee for that purpose) on a plate and top with the baked egg. Serve with hash browns or roasted potatoes or any kind of bread.
