This cookie recipe was requested by several of our recent guests. It’s one of the cookies that our guests enjoy. So even though we’ve been making them for years I thought I would go ahead and provide our recipe for White Chocolate Cranberry Oatmeal Cookies. We hope you enjoy them as much as the guests who have requested them.
White Chocolate Cranberry Oatmeal Cookies
½ cup butter, softened
2/3 cup light brown sugar
1 large egg
1 tsp vanilla
¾ cup flour
½ tsp baking soda
½ tsp cinnamon
½ tsp salt
1 ½ cup old fashioned oats
¾ cup dried cranberries
½ cup pecans, chopped (optional)
½ cup white chocolate chips
Directions:
Preheat oven to 350°F. Line cookie sheets with parchment paper. Set aside.
Cream butter and brown sugar together in a large bowl. Add egg and vanilla. Mix until batter is smooth.
Combine flour, baking soda, cinnamon and salt. Stir into batter.
Stir in oatmeal, cranberries, chopped pecans and white chocolate chips.
Drop by heaping teaspoon onto prepared cookie sheets. Bake for 10-12 minutes (depending on size of cookie ball).
Note: Cookie batter may be dropped on a tray and frozen. These cookie balls will freeze for one month before you bake them. Add a couple of minutes to the baking time.
