Well I missed two weeks on providing you with a new cookie recipe due to a family emergency. But I am back now coming up with some new cookies for you to try. This week they are Orange Cookies. Not sure why I got in the mood for them but I did.
These are very simple to make and do provide a nice orange flavor due to the orange zest so don’t skimp. An alternate for these would be to use Mandarin oranges or tangerines.
Orange Cookies
2 1/4 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 cup shortening
1 cup granulated sugar
1 whole egg, large
2 tablespoons orange zest
2 tablespoons orange juice
½ teaspoon orange flavor
1/4 cup granulated sugar
½ cup powdered sugar
1 tablespoon orange juice
Directions:
Preheat oven to 375oF. Line 2 cookie sheets with parchment paper.
In a large bowl combine the flour, baking soda and salt, cinnamon. Whisk or stir together.
In a separate large bowl cream the butter and sugar until fluffy. Beat in the egg, orange zest, orange juice and orange extract. Stir in
the flour mixture. Mix until flour is just incorporated.
Roll dough into 1 inch balls. Place sugar in a Ziploc bag. Add several of the dough balls to the sugar bag, seal and shake until balls are covered with sugar. Place dough balls on cookie sheets and flatten to 1/8 of an inch.
Bake for 5 minutes then rotate pans and bake for 4-5 minutes longer. Cool on rack.
While cookies are cooling make the orange glaze. Combine the powdered sugar and the orange together. Mix well – until all lumps are gone. With a fork drizzle the glaze over the cookies.
