Just got back from tasting cider at Castle Hill Cider in Keswick. Great ciders!
They offer four ciders – two sparkling and two still. My favorites were the non-sparkling and Dan’s were the sparkling ones. So we brought home a bottle of one of the sparkling – Levity. I can’t do justice to the descriptions of these ciders so please click here to learn more. They have one more cider which they just finished bottling that we got to taste – Celestial. It is so new it isn’t even on their website yet. It is very reminiscent of Gravity but is sparkling. It is very good!
None of us who were there knew that much about ciders so Tom in the Tasting Room spent a lot of time explaining the cider making process to us. The kvevri that is used for fermentation and aging of Levity is interesting. They bury it in the ground for four months before removing the cider. This helps keep the cider at a constant temperature while it rests on the lees. This is what builds the complex flavors of the cider.
These ciders would be great to enjoy with cheese while sitting on their patio or balcony looking out over the gorgeous hills. I wish we had our camera with us so you could see how beautiful it is.
